The Spring Forward Cocktail
Ingredients:
- 2 oz gin
- 1/2 oz fresh cucumber syrup
- 4 oz pink lemonade tonic water
- Hibiscus-Infused Henlopen Sea Salt for rimming (recipe below)
- Pink peppercorns for garnish
- Spring violas for garnish
The Spring Refresh Mocktail

Ingredients:
- 1 oz cucumber syrup
- 2 oz fresh lemon juice
- 3 oz pink grapefruit soda or cranberry sparkling water
- 1/2 oz honey simple syrup, lavender syrup, or a splash of rose water
- Hibiscus-Infused Henlopen Sea Salt for rimming (recipe below)
- Pink peppercorns for garnish
- Fresh daffodil greens or spring flowers for garnish
Make Your Own Hibiscus Salt
The perfect finishing touch for spring cocktails
Ingredients:
- 4 tablespoons Henlopen Sea Salt
- 2 tablespoons organic dried hibiscus flowers
- 1 teaspoon water
Instructions:
- Place dried hibiscus flowers in a food processor or spice grinder and pulse until coarsely ground
- In a small bowl, combine the Henlopen Sea Salt with the ground hibiscus
- Add 1 teaspoon of water and mix thoroughly (this helps the hibiscus color infuse into the salt crystals)
- Spread the mixture in a thin layer on parchment paper and allow to dry completely (about 8 hours or overnight)
- Once dry, gently break apart the salt into flakes
- Store in an airtight container for up to one month
For the cucumber syrup: Toss cucumber slices with sugar in a sealed bag and let rest for 4 hours. The natural cucumber juices will create a refreshing simple syrup.
To prepare (both versions):
- Run a lemon wedge around the rim of your glass, then dip in your homemade Hibiscus-Infused Henlopen Sea Salt
- For cocktail: Shake gin and cucumber syrup with ice For mocktail: Stir cucumber syrup, lemon juice, and honey simple syrup (or your chosen sweetener) with ice
- Strain into ice-filled glasses
- Top with pink lemonade tonic (cocktail) or pink grapefruit soda (mocktail)
- Garnish with pink peppercorns and spring flowers
- Serve in a woven tray for the perfect garden party presentation
